In a large mixing bowl, whisk together the yogurt, 2 tbsp lemon juice freshly squeezed, and 1 tbsp neutral oil such as vegetable or canola oil until smooth. Add the grated cloves garlic finely grated or minced, 1 tbsp fresh ginger finely grated, Kashmiri chili powder, 1 tsp cayenne pepper reduce to ½ tsp for milder heat, 2 tsp ground cumin, 2 tsp ground coriander, 1 tsp garam masala, 1 tsp ground turmeric, 1 tsp smoked paprika, 1 ½ tsp kosher salt, and 1 tsp sugar helps browning. Whisk until fully combined into a uniform, deep red-orange marinade. Taste it — it should be bold, tangy, and well-seasoned.

Using a knife, make 2–3 deep diagonal slashes through the thickest part of each chicken piece, cutting all the way to the bone. This is essential — it allows the marinade to penetrate deeply and ensures even cooking.

Add the chicken pieces to the marinade bowl and turn to coat thoroughly, pressing the marinade into the slashes with your hands. Cover the bowl tightly with plastic wrap and refrigerate for at least 4 hours, or ideally overnight (up to 24 hours).

When ready to cook, remove the chicken from the refrigerator and let it sit at room temperature for 30 minutes. This takes the chill off and promotes more even cooking.

Preheat your oven to 450°F. Line a baking sheet with aluminum foil and set a wire rack on top. Lightly oil the rack. Place the marinated chicken pieces on the rack in a single layer, leaving space between each piece. Shake off any excess marinade that is pooling — a thin, even coating is what you want.

Roast the chicken on the center rack for 25–30 minutes, until the marinade is set and beginning to char at the edges. Bone-in thighs and legs are done when an instant-read thermometer inserted into the thickest part (not touching bone) reads 165°F.
