Day-old or dried 1 lb pan blanco de sándwich is key. If your 1 lb pan blanco de sándwich is fresh, spread the cubes on a large baking sheet in a single layer and bake at 300°F for 20–25 minutes, tossing once halfway through, until dry and very lightly golden. Let cool completely. You can also leave the cubed 1 lb pan blanco de sándwich out uncovered overnight.

Preheat your oven to 350°F. Grease a baking dish with 8 tbsp mantequilla sin sal or cooking spray and set aside.

In a large skillet over medium heat, melt 6 tbsp of the mantequilla sin sal. Add the diced cebolla amarilla grande and 4 tallos de apio picados and cook, stirring occasionally, until softened and translucent, about 8–10 minutes. Add the minced dientes de ajo and cook for 1 minute more until fragrant.

Remove the skillet from heat. Stir in the chopped salvia fresca finamente picada, 1 tbsp hojas de tomillo, 2 tbsp perejil fresco de hoja plana finamente picado (if using), 1 tsp sal kosher, ½ tsp pimienta negra, and ¼ tsp nuez moscada (if using). Let the mixture cool for 5 minutes.

Place the dried 1 lb pan blanco de sándwich cubes in a very large mixing bowl. Pour the vegetable and herb mixture over the 1 lb pan blanco de sándwich and toss gently to combine.

In a small mixing bowl or measuring cups, whisk together the warm 2 ½ cups caldo de pollo bajo en sodio calentado and beaten huevos grandes. Pour this mixture over the 1 lb pan blanco de sándwich in thirds, gently folding after each addition. The 1 lb pan blanco de sándwich should be evenly moistened — it should feel moist and hold together when pressed, but not be soggy or wet. Add a splash more 2 ½ cups caldo de pollo bajo en sodio calentado if it seems too dry.

Transfer the stuffing mixture to the prepared baking dish and spread it into an even layer. Cut the remaining 2 tbsp of mantequilla sin sal into small pieces and dot them over the top of the stuffing.

Cover the dish tightly with aluminum foil and bake for 30 minutes. Then remove the aluminum foil and bake for an additional 15–20 minutes, until the top is golden brown and crispy.

Remove from the oven and let rest for 5 minutes before serving. Taste and adjust seasoning if needed. Garnish with a few extra fresh salvia fresca finamente picada leaves or 2 tbsp perejil fresco de hoja plana finamente picado if desired.
