  • 300°F

Day-old or dried 1 lb white sandwich bread is key. If your 1 lb white sandwich bread is fresh, spread the cubes on a large baking sheet in a single layer and bake at 300°F for 20–25 minutes, tossing once halfway through, until dry and very lightly golden. Let cool completely. You can also leave the cubed 1 lb white sandwich bread out uncovered overnight.

Uses

  • Baking Sheet
  • White Sandwich Bread
  • 350°F

Preheat your oven to 350°F. Grease a baking dish with 8 tbsp unsalted butter or cooking spray and set aside.

In a large skillet over medium heat, melt 6 tbsp of the unsalted butter. Add the diced large yellow onion diced and 4 stalks celery diced and cook, stirring occasionally, until softened and translucent, about 8–10 minutes. Add the minced cloves garlic minced and cook for 1 minute more until fragrant.

Remove the skillet from heat. Stir in the chopped fresh sage finely chopped, 1 tbsp fresh thyme leaves stems removed, 2 tbsp fresh flat-leaf parsley finely chopped (if using), 1 tsp kosher salt, ½ tsp black pepper freshly ground, and ¼ tsp ground nutmeg (if using). Let the mixture cool for 5 minutes.

Place the dried 1 lb white sandwich bread cubes in a very large mixing bowl. Pour the vegetable and herb mixture over the 1 lb white sandwich bread and toss gently to combine.

Uses

  • Mixing Bowl
  • White Sandwich Bread

In a small mixing bowl or measuring cups, whisk together the warm 2 ½ cups low-sodium chicken broth and beaten large eggs lightly. Pour this mixture over the 1 lb white sandwich bread in thirds, gently folding after each addition. The 1 lb white sandwich bread should be evenly moistened — it should feel moist and hold together when pressed, but not be soggy or wet. Add a splash more 2 ½ cups low-sodium chicken broth if it seems too dry.
