In a medium heatproof Mixing Bowl, combine the chopped 4 oz chocolate amargo picado aproximadamente (se recomienda cacao 60–70%) and 4 tbsp mantequilla sin sal cortada en trozos, más para engrasar. Melt together using a Double Boiler (set the bowl over a Pot of barely simmering water, making sure the bottom of the bowl doesn't touch the water), stirring frequently until completely smooth. Alternatively, Microwave in 30-second bursts, stirring between each, until melted. Remove from heat and let cool for 3–4 minutes.

In a separate large Mixing Bowl, whisk together the 2 huevos a temperatura ambiente, 2 huevos a temperatura ambiente, ¼ cup azúcar granulado, 1 tsp extracto de vainilla pura, and ¼ tsp sal fina vigorously for about 1–2 minutes until the mixture is slightly pale and well combined.

Bake on the center rack for 11–13 minutes. The cakes are done when the edges are firm and set but the center still jiggles slightly when you gently shake the Baking Sheet. Do not overbake — the molten center is the whole point! Start checking at 11 minutes.

Remove from the Oven and let the cakes rest in the Ramekins for exactly 1 minute. Run a thin Knife or Spatula around the edge of each Ramekins to loosen. Place a dessert plate upside-down on top of each Ramekins, then confidently flip them together. Let sit for 10 seconds, then lift the Ramekins away. The cake should release cleanly.
