These individual chocolate lava cakes have a perfectly set, fudgy exterior with a warm, flowing molten chocolate center that oozes dramatically when you cut in. Using just a handful of pantry staples, this recipe is surprisingly simple and virtually foolproof — the secret is all in the timing.     Preheat your Oven to 425°F. Generously Butter four 6-oz Ramekins, then dust each with Unsweetened Cocoa Powder, tapping out any excess. This ensures a clean release. Place the prepared Ramekins on a Baking Sheet and set aside.

    In a medium heatproof Mixing Bowl, combine the chopped Bittersweet Chocolate and Butter. Melt together using a Double Boiler (set the bowl over a Pot of barely simmering water, making sure the bottom of the bowl doesn't touch the water), stirring frequently until completely smooth. Alternatively, Microwave in 30-second bursts, stirring between each, until melted. Remove from heat and let cool for 3–4 minutes.

    In a separate large Mixing Bowl, whisk together the Eggs, Egg Yolks, Granulated Sugar, Pure Vanilla Extract, and Fine Salt vigorously for about 1–2 minutes until the mixture is slightly pale and well combined.

    Pour the slightly cooled Bittersweet Chocolate mixture into the Eggs mixture and Whisk until smooth and fully incorporated.

    Sift the All-Purpose Flour over the batter and gently fold it in with a Spatula until just combined — do not overmix. The batter will be thin and glossy.

    Divide the batter evenly among the four prepared Ramekins, filling each about three-quarters full.

    Bake on the center rack for 11–13 minutes. The cakes are done when the edges are firm and set but the center still jiggles slightly when you gently shake the Baking Sheet. Do not overbake — the molten center is the whole point! Start checking at 11 minutes.

    Remove from the Oven and let the cakes rest in the Ramekins for exactly 1 minute. Run a thin Knife or Spatula around the edge of each Ramekins to loosen. Place a dessert plate upside-down on top of each Ramekins, then confidently flip them together. Let sit for 10 seconds, then lift the Ramekins away. The cake should release cleanly.

    Dust the tops with Powdered Sugar and serve immediately with a scoop of Vanilla Ice Cream and fresh Raspberries alongside. The lava center will begin to set if left to sit, so serve right away for the full molten effect.
