  • 425°F

Preheat your oven to 425°F. Generously butter four 6 oz ramekins, then dust each with 1 tbsp cacao en polvo sin azúcar, tapping out any excess. This ensures a clean release. Place the prepared ramekins on a baking sheet and set aside.

Uses

  • Oven
  • Butter
  • Ramekins
  • Baking Sheet
  • Unsalted Butter
  • 1 min

In a medium heatproof mixing bowl, combine the chopped chocolate amargo picado aproximadamente and 4 tbsp mantequilla sin sal. Melt together using a double boiler (set the bowl over a pot of barely simmering water, making sure the bottom of the bowl doesn't touch the water), stirring frequently until completely smooth. Alternatively, microwave in 30-second bursts, stirring between each, until melted. Remove from heat and let cool for 3–4 minutes.

  • Double Boiler
  • Pot

  • Bittersweet Chocolate
  • 1–2 min

In a separate large mixing bowl, whisk together the 2 huevos a temperatura ambiente, 2 yemas de huevo, ¼ cup azúcar granulado, 1 tsp extracto de vainilla pura, and ¼ tsp sal fina vigorously for about 1–2 minutes until the mixture is slightly pale and well combined.

Uses

  • Mixing Bowl

Pour the slightly cooled 4 oz chocolate amargo picado aproximadamente mixture into the 2 huevos a temperatura ambiente mixture and whisk until smooth and fully incorporated.

Uses

  • Bittersweet Chocolate

Sift the 2 tbsp harina de trigo over the batter and gently fold it in with a spatula until just combined — do not overmix. The batter will be thin and glossy.

Uses

  • Spatula

Divide the batter evenly among the four prepared ramekins, filling each about three-quarters full.

Uses

  • Ramekins
  • 11–13 min

Bake on the center rack for 11–13 minutes. The cakes are done when the edges are firm and set but the center still jiggles slightly when you gently shake the baking sheet. Do not overbake — the molten center is the whole point! Start checking at 11 minutes.

Uses

  • Baking Sheet
  • 1 min

Remove from the oven and let the cakes rest in the ramekins for exactly 1 minute. Run a thin knife or spatula around the edge of each ramekins to loosen. Place a dessert plate upside-down on top of each ramekins, then confidently flip them together. Let sit for 10 seconds, then lift the ramekins away. The cake should release cleanly.

Uses

  • Oven
  • Ramekins
  • Knife
  • Spatula

Dust the tops with azúcar glas para enpolvar and serve immediately with a scoop of helado de vainilla and fresh frambuesas frescas alongside. The lava center will begin to set if left to sit, so serve right away for the full molten effect.
