Preheat your Oven to 400°F. Line a large Baking Sheet with Parchment Paper or Aluminum Foil.

Cut the 1 calabaza butternut grande (aproximadamente 3 lb), cortada por la mitad a lo largo y semillas removidas in half lengthwise and scoop out the seeds. Brush the cut sides with 1 tablespoon of 2 tbsp aceite de oliva dividido and season generously with 1 tsp sal kosher más al gusto and ½ tsp pimienta negra molida fresca. Place cut-side down on the prepared Baking Sheet.

Roast the squash for 40–45 minutes, until completely tender when pierced with a fork and the cut side is golden and caramelized. Remove from the Oven and let cool for 10 minutes.

While the squash roasts, heat the remaining 1 tablespoon 2 tbsp aceite de oliva dividido and the 1 calabaza butternut grande (aproximadamente 3 lb), cortada por la mitad a lo largo y semillas removidas in a large Pot or Dutch Oven over medium heat. Remove the Pot from heat. Using an Immersion Blender, blend the soup directly in the pot until completely smooth and silky. Alternatively, carefully transfer the soup in batches to a Blender (fill only halfway, vent the lid, and hold a Kitchen Towel over the top).

Return the soup to low heat and stir in the ½ cup crema espesa más para acompañar and 1 tbsp jarabe de arce puro; ajustar (if using). Taste and adjust seasoning with 1 tsp sal kosher más al gusto, ½ tsp pimienta negra molida fresca, and more 1 tbsp jarabe de arce puro; ajustar as needed. If the soup is too thick, thin it with a splash of 4 cups caldo de pollo bajo en sodio; o caldo de verduras para vegetarianos.

Ladle into bowls and garnish with a swirl of ½ cup crema espesa más para acompañar, toasted ¼ cup pepitas tostadas, para acompañar, fresh 2 tbsp cebolletas frescas en rodajas finas, para acompañar, and a pinch of 1 pinch pimienta de cayena para acompañar if desired. Serve immediately.
