Preheat your oven to 400°F. Line a large baking sheet with parchment paper or aluminum foil.

Cut the 1 calabaza butternut grande (aproximadamente 3 lbs) in half lengthwise and scoop out the seeds. Brush the cut sides with 1 tablespoon of aceite de oliva dividido and season generously with 1 tsp sal kosher más al gusto and ½ tsp pimienta negra. Place cut-side down on the prepared baking sheet.

Roast the squash for 40–45 minutes, until completely tender when pierced with a fork and the cut side is golden and caramelized. Remove from the oven and let cool for 10 minutes.

While the squash roasts, heat the remaining 1 tablespoon 2 tbsp aceite de oliva dividido and the 2 tbsp mantequilla sin sal in a large pot or Dutch oven over medium heat. Add the 1 cebolla amarilla, 2 tallos de apio, and 1 zanahoria pelada y. Cook, stirring occasionally, for 7–8 minutes until softened and lightly golden.

Add the 3 dientes de ajo, 1 tsp canela, ½ tsp nuez moscada molida se prefiere recién rallada, and ¼ tsp jengibre. Stir and cook for 1 minute until fragrant.

Once the squash is cool enough to handle, use a large spoon to scoop the flesh away from the skin. Discard the skin and add the squash flesh directly into the pot with the aromatics.

Pour in the 4 cups caldo de pollo bajo en sodio (or vegetable broth for vegetarian). Stir everything together and bring to a simmer over medium-high heat. Let simmer for 10 minutes to meld the flavors.

Remove the pot from heat. Using an immersion blender, blend the soup directly in the pot until completely smooth and silky. Alternatively, carefully transfer the soup in batches to a blender (fill only halfway, vent the lid, and hold a kitchen towel over the top).

Return the soup to low heat and stir in the ½ cup crema espesa and 1 tbsp jarabe de arce puro (if using). Taste and adjust seasoning with 1 tsp sal kosher más al gusto, ½ tsp pimienta negra, and more 1 tbsp jarabe de arce puro as needed. If the soup is too thick, thin it with a splash of caldo de pollo bajo en sodio.

Ladle into bowls and garnish with a swirl of crema espesa, toasted ¼ cup pepitas tostadas, fresh cebolletas frescas en rodajas finas, and a pinch of pimienta de cayena para acompañar if desired. Serve immediately.
