
Watermelon Agua Fresca

A refreshing, lightly sweetened Mexican watermelon drink made with just a handful of ingredients. Bright, hydrating, and naturally sweet, this classic agua fresca is blended smooth, strained for a silky finish, and finished with a squeeze of fresh lime. Perfect for hot days, backyard gatherings, or anytime you want a cool, crowd-pleasing drink that comes together in minutes.

Cut the seedless watermelon cubed, rind removed into rough 1-inch cubes, removing the rind. You should have about 8 cups of cubed seedless watermelon cubed, rind removed. If your seedless watermelon cubed, rind removed has seeds, pick them out as you go.

Working in batches if needed, add the seedless watermelon cubed, rind removed cubes to a blender. Blend on high for 30–45 seconds until completely smooth and liquified.

Set a sieve over a large pitcher (Large). Pour the blended seedless watermelon cubed, rind removed through the strainer, pressing gently with a wooden spoon to push the juice through. Discard the small amount of pulp left behind.

Add the cold water, fresh lime juice, and a pinch of salt to the pitcher (Large). Stir well to combine.

Taste and adjust sweetness. If your seedless watermelon cubed, rind removed is very sweet, you may not need any sugar at all. If it needs a boost, stir in sugar 1 tablespoon at a time until it reaches your preferred sweetness. Stir until fully dissolved.

Refrigerate until cold, at least 30 minutes, or serve immediately over plenty of ice. Stir well before serving, as the juice can settle.

Pour into tall glasses filled with ice. Garnish with a lime slice and a sprig of fresh mint if desired. Serve immediately.
