Press the 14 oz firm tofu: Wrap the block of firm tofu in a clean kitchen towel or several layers of paper towels and set a heavy pot on top. Let it press for at least 15 minutes to remove excess moisture. Once pressed, crumble the 14 oz firm tofu into a mixing bowl using your hands, leaving some larger chunks for texture — aim for a rough, scrambled-egg-like consistency.

Sauté the vegetables: Heat the 2 tbsp olive oil in a large skillet over medium-high heat. Add the diced medium yellow onion and 1 whole red bell pepper diced and cook, stirring occasionally, for 4–5 minutes until softened and lightly golden. Add the 3 cloves garlic and cook for another 30 seconds until fragrant.

Add the 14 oz firm tofu and spices: Add the crumbled 14 oz firm tofu to the skillet and spread it into an even layer. Sprinkle the 1 tsp ground turmeric, 1 tsp ground cumin, ½ tsp smoked paprika, ½ tsp fine sea salt, and ¼ tsp black pepper evenly over the 14 oz firm tofu. Stir well to coat everything in the spices. Cook undisturbed for 2 minutes to let the bottom develop a little color, then stir and cook for another 3–4 minutes, stirring occasionally, until the 14 oz firm tofu is heated through and slightly golden.

Finish and serve: Reduce heat to medium-low. Add the 2 cups baby spinach and stir until wilted, about 1 minute. Drizzle in the 1 tbsp soy sauce (or tamari for gluten-free) and sprinkle in the 3 tbsp nutritional yeast. Stir everything together and cook for 1 more minute. Taste and adjust seasoning as needed. Serve immediately, garnished with fresh fresh chives or parsley chopped or 2 tbsp parsley if desired. Great alongside toast, roasted potatoes, or fresh fruit.
