Rice

Poke Marinade

  • 1.5 lb sushi-grade ahi tuna cut into ¾-inch cubes
  • 3 tbsp soy sauce low-sodium preferred
  • 1 tbsp sesame oil toasted
  • 1 tbsp rice vinegar
  • 1 tsp fresh ginger finely grated
  • 2 cloves garlic minced
  • 2 tbsp green onions thinly sliced
  • 1 tsp sesame seeds toasted

Spicy Mayo

  • 3 tbsp mayonnaise
  • 1 tbsp sriracha adjust
  • 1 tsp lime juice freshly squeezed

Main

  • 2 whole ripe avocado halved, pitted, and sliced
  • 1 whole English cucumber thinly sliced or diced
  • 1 cup shelled edamame thawed if frozen
  • 0.5 cup shredded carrots
  • 2 tbsp pickled ginger for serving
  • 1 tbsp sesame seeds for garnish

Instructions

  1. Rinse the @[Sushi Rice] in a fine mesh strainer under ^[cold water] until the water runs clear, about ~[1–2 minutes]. Combine the rinsed rice and ~[2½ cups] @[Water] in a #[Saucepan]. Bring to a boil over ^[medium-high heat], then reduce to ^[the lowest heat setting], cover, and cook for ~[15 minutes]. Remove from heat and let steam, covered, for ~[5 more minutes]. Fluff with a rice paddle, then fold in the @[Rice Vinegar] and @[Sugar]. Spread on a plate to cool slightly.
  2. While the rice cooks, whisk together the @[Soy Sauce], @[Sesame Oil], @[Rice Vinegar], @[Ginger] grated, and @[Garlic] minced in a #[Mixing Bowl].
