
Thai Coconut Soup

1 lb boneless skinless chicken breast thinly sliced
2 can full-fat coconut milk shaken
2 cup chicken broth
2 tbsp red curry paste
2 tbsp fish sauce
1 tbsp fresh ginger peeled and grated
3 cloves garlic minced- 2 stalks lemongrass outer layers removed, bruised and cut into 2-inch pieces
8 oz mushrooms sliced
1 tbsp coconut oil
1 tbsp brown sugar
3 tbsp fresh lime juice from about 2 limes
0.25 cup fresh cilantro roughly chopped
2 whole green onions thinly sliced
1 whole red chili thinly sliced

Instructions
- Heat the @[Coconut Oil] in a large #[Pot] over ^[medium heat]. Add the @[Garlic] and grated @[Ginger] and sauté for about ~[1 minute] until fragrant. Stir in the @[Red Curry Paste] and cook for another ~[30 seconds], letting it bloom in the oil.
- Pour in the @[Coconut Milk] and @[Chicken Broth]. Add the bruised @[Lemongrass] stalks and bring the broth to a gentle simmer over ^[medium heat]. Let it simmer for ~[5 minutes] to infuse the lemongrass flavor into the broth.
- Add the sliced @[Chicken Breast] and @[Mushrooms] to the simmering broth. Cook for ~[8–10 minutes], stirring occasionally, until the chicken is cooked through and the mushrooms are tender.
