Instructions
- Rinse the @[Strawberries With Stems On] and pat them completely dry with #[Paper Towel] — this is critical. Any moisture will cause the @[White Sugar] coating to slide off or turn cloudy. Thread 2–3 @[Strawberries With Stems On] onto each #[Bamboo Skewer] through the stem end. Line a #[Baking Sheet] with #[Parchment Paper] and lightly grease it with a neutral oil or #[Cooking Spray]; set aside.
- Combine the @[Granulated White Sugar], @[Water], and @[Cream of Tartar] (if using) in a medium #[Saucepan] over ^[medium-high heat]. Stir gently just until the @[White Sugar] dissolves, then stop stirring completely. Clip a #[Meat Thermometer] to the side of the #[Saucepan]. Bring the syrup to a boil and cook, without stirring, until it reaches ![300–310°F] (hard-crack stage). This takes about ~[10–12 minutes]. The syrup should be clear and just barely starting to turn the faintest golden hue.
- As soon as the syrup hits ![300°F], remove the #[Saucepan] from heat immediately. Working very quickly (the syrup cools fast), tilt the #[Saucepan] at an angle and dip each #[Bamboo Skewer] of @[Strawberries With Stems On] into the syrup, rotating to coat evenly. Let any excess drip off for ~[2–3 seconds], then place the #[Bamboo Skewer] on the prepared #[Parchment Paper]-lined #[Baking Sheet]. If desired, sprinkle with @[Flaky Sea Salt] or @[Edible Glitter] before the coating sets.
- Allow the coated @[Strawberries With Stems On] to rest at room temperature for ~[3–5 minutes] until the @[White Sugar] shell hardens completely into a glassy, crackling coating. Do not refrigerate — humidity will make the shell sticky and soft. Serve immediately for the best crunch. Tap the shell gently with a fingernail to confirm it's set before serving.
