In a large mixing bowl, toss the halved 1 lb baby potatoes, 2 medium carrots pieces, 1 whole red bell pepper seeded strips, and 1 large yellow onion halved and sliced into half-moons slices with 3 tbsp olive oil, 1 tsp dried thyme, 1 tsp 1 ½ tsp kosher salt, and ½ tsp 1 tsp black pepper until evenly coated. Spread the vegetables in a single layer on a large baking sheet — do not overcrowd.

While the vegetables roast, pat the 2 lb ribeye or strip steak completely dry with paper towel. In a small mixing bowl, mix together 1½ tsp 1 ½ tsp kosher salt, 1 tsp 1 tsp black pepper, and 1 tsp 1 tsp smoked paprika. Season both sides of each 2 lb ribeye or strip steak generously with the spice mixture. Let the 2 lb ribeye or strip steak rest at room temperature for 10–15 minutes.

Heat a cast iron skillet over high heat until smoking hot, about 2 minutes. Add the 1 tbsp vegetable oil and swirl to coat.
