Instructions

Tap a step number to check it off as you cook.

Bring a large pot of water to a boil. Season it very generously with 1 tsp kosher salt — it should taste pleasantly salty, like mild seawater. This is your only chance to season the pasta itself.

Uses

  • Pot
  • Pasta Cooking Water
  • Kosher Salt
  • 1 min

Cook the pasta according to package directions until just al dente (usually 1 minute less than the package suggests). Before draining, scoop out at least ½ cup of the starchy ½ cup pasta cooking water reserved before draining and set it aside — this is key to building your sauce. Drain the pasta and set aside.

Uses

  • 2–3 min

While the pasta cooks, heat the 3 tbsp olive oil extra-virgin in a large skillet over medium heat. Add the 1 shallot finely diced and cook, stirring occasionally, until softened, about 2–3 minutes. Add the sliced cloves garlic thinly sliced and ¼ tsp red pepper flakes (if using) and cook for 1 more minute until fragrant. Don't let the 4 cloves garlic thinly sliced brown.

  • Olive Oil
  • Shallot
  • Garlic
  • Red Pepper Flakes
  • Black Pepper
  • 3–5 min

Add the 1 zucchini halved lengthwise and sliced into half-moons to the skillet and cook, stirring occasionally, until just tender, about 3 minutes. Add the 1 bunch asparagus tough ends snapped off pieces and cook for another 2 minutes — they should be bright green and just barely tender.

Uses

  • Skillet
  • Zucchini
  • Asparagus
  • 1–2 min

Pour in the white wine and let it simmer, stirring occasionally, until mostly reduced, about 2 minutes. Add the 1 cup cherry tomatoes halved and 1 cup frozen peas, stir to combine, and cook for 1–2 minutes until the tomatoes begin to soften slightly.

  • Peas

Add the drained pasta directly to the skillet. Pour in ¼ cup of the reserved ½ cup pasta cooking water reserved before draining and add the 2 tbsp unsalted butter. Toss everything together vigorously with tongs for 1–2 minutes over medium heat. The starchy water and 2 tbsp unsalted butter will emulsify into a light, silky sauce that coats every strand. Add more ½ cup pasta cooking water reserved before draining a splash at a time if the pasta looks dry.

Uses

  • Skillet
  • Tongs
  • Pasta Cooking Water
  • Unsalted Butter

Remove the skillet from heat. Add the 1 tsp lemon zest from about 1 lemon, 2 tbsp lemon juice freshly squeezed, and freshly grated Parmesan cheese freshly grated. Toss well to combine. Taste and adjust 1 tsp kosher salt and ½ tsp black pepper freshly ground as needed.

Uses

  • Skillet
  • Lemon Zest
  • Lemon Juice
  • Parmesan Cheese
  • Kosher Salt
  • Black Pepper
  • Red Pepper Flakes

Divide the pasta among warm bowls. Top with torn fresh fresh basil leaves torn, chopped fresh parsley roughly chopped (if using), an extra grating of Parmesan cheese freshly grated, and a crack of black pepper freshly ground. Serve immediately.
