Spinach Lasagna Rolls

Tender lasagna noodles rolled up with a creamy ricotta-spinach filling, nestled in marinara sauce, and blanketed with melted mozzarella and Parmesan. These individual rolls are easier to serve than traditional lasagna, freeze beautifully, and are a guaranteed crowd-pleaser for the whole family.

Spinach Filling

  • 1 tbsp olive oil
  • 3 cloves garlic minced
  • 10 oz fresh baby spinach roughly chopped
  • 15 oz ricotta cheese whole milk
  • 1 large egg
  • 2 cup shredded mozzarella cheese divided
  • 0.75 cup grated Parmesan cheese divided
  • 1 tsp Italian seasoning
  • 0.5 tsp salt plus more for pasta water
  • 0.25 tsp black pepper freshly ground

Topping

  • 2 tbsp fresh basil torn or chiffonade

Instructions

  1. Preheat your #[Oven] to ![375°F]. Bring a large #[Pot] of generously salted water to a boil. Cook the @[Lasagna Noodles] according to package directions until al dente, about ~[8–10 minutes]. Drain and lay flat on a lightly oiled #[Baking Sheet] or #[Parchment Paper] so they don't stick together.
  2. While the noodles cook, heat the @[Olive Oil] in a large #[Skillet] over ^[medium heat]. Add the @[Garlic] and sauté for ~[30 seconds] until fragrant. Add the @[Baby Spinach] in batches, tossing until fully wilted, about ~[3–4 minutes]. Season lightly with @[Salt] and @[Black Pepper]. Transfer to a #[Colander] and press out as much excess moisture as possible, then let cool slightly.
  3. In a large #[Mixing Bowl], combine the @[Ricotta Cheese], @[Egg], 1 cup of the @[Mozzarella Cheese], ½ cup of the @[Parmesan Cheese], @[Italian Seasoning], @[Salt], and @[Black Pepper]. Stir until smooth. Fold in the cooled, drained @[Baby Spinach] until evenly incorporated.
  4. Spread 1 cup of @[Marinara Sauce] evenly across the bottom of a 9×13-inch #[Baking Dish]. Lay a cooked @[Lasagna Noodles] flat and spread about 3 tablespoons of the ricotta-spinach filling in an even layer across the entire noodle. Roll it up snugly from one end and place seam-side down in the #[Baking Dish]. Repeat with the remaining @[Lasagna Noodles] and filling.
  5. Spoon the remaining 2 cups of @[Marinara Sauce] over the tops of the rolls. Sprinkle with the remaining 1 cup of @[Mozzarella Cheese] and ¼ cup of @[Parmesan Cheese]. Cover the dish tightly with #[Aluminum Foil].
  6. Bake covered at ![375°F] for ~[25 minutes]. Remove the #[Aluminum Foil] and bake for an additional ~[15 minutes], until the cheese is bubbly and golden at the edges. Let rest for ~[5 minutes] before serving. Garnish with fresh @[Basil] if desired.
