Heat 1 tablespoon of olive oil in a skillet over medium-high heat. Add the 1 ¼ lb Italian sausage links sweet rounds in a single layer and cook, undisturbed, for 2–3 minutes per side until deeply browned. Transfer to a plate and set aside.

Reduce heat to medium and add the remaining 1 tablespoon of olive oil to the same skillet. Add the sliced large yellow onion and all the whole red bell pepper, 1 whole green bell pepper, and 1 whole yellow bell pepper. Season with ½ tsp kosher salt and ¼ tsp black pepper. Cook, stirring occasionally, for 6–8 minutes until the vegetables are softened and beginning to caramelize at the edges.

Pour in the 1 can diced tomatoes undrained (with their juices) and ½ cup chicken broth. Stir to combine, scraping up any browned bits from the bottom of the pan. Nestle the browned 1 ¼ lb Italian sausage links sweet back into the skillet.
