Simple, sweet, and deeply caramelized, these oven-roasted carrots are the side dish that always disappears first. Preheat your oven to ![425°F]. Line a large baking sheet with parchment paper or leave it unlined for better browning.

In a large mixing bowl, combine the olive oil, honey, minced garlic, salt, black pepper, thyme, and smoked paprika. Add the peeled and cut carrots and toss well until every piece is evenly coated.

Spread the carrots in a single layer on the prepared baking sheet, making sure they are not overlapping — crowding causes steaming instead of roasting. Roast in the preheated oven for 20 minutes.

Flip the carrots with a spatula and continue roasting for another 8 minutes, or until the edges are caramelized and golden and a fork slides in easily.
