
Roasted Broccoli with Cheese

Tender-crisp broccoli florets roasted at high heat until golden and slightly charred, then blanketed with melted cheddar cheese. This simple, crowd-pleasing side is a guaranteed hit with kids and adults alike — caramelized edges, gooey cheese, and just a hint of garlic make it irresistible.

Preheat your oven to ![425°F]. Line a large baking sheet with aluminum foil or leave it bare for better browning. Make sure the rack is in the upper-middle position.

In a large mixing bowl, toss the broccoli florets with olive oil, garlic minced, salt, black pepper, and red pepper flakes (if using) until every piece is evenly coated. Spread the broccoli florets in a single layer on the prepared baking sheet — don't crowd the pan or it will steam instead of roast.

Roast in the preheated oven for 15–18 minutes, until the florets are tender and the edges are golden brown and slightly crispy. Flip the pieces once halfway through for even caramelization.

Remove the baking sheet from the oven. Sprinkle the shredded cheddar cheese (and Parmesan cheese, if using) evenly over the roasted broccoli florets. Return to the oven and roast for another 3–4 minutes, until the cheese is fully melted and bubbly with lightly golden spots.
