  • 425°F

Preheat your oven to 425°F. Line a large rimmed baking sheet with aluminum foil or parchment paper for easy cleanup.

Uses

  • Oven
  • Baking Sheet
  • Aluminum Foil
  • Parchment Paper

Wash the 1 lb asparagus woody ends trimmed and pat dry thoroughly — moisture is the enemy of good roasting. To trim the woody ends, hold one spear and bend it gently near the base; it will snap naturally at the right spot. Use that as a guide and cut the rest of the bunch to match.

Uses

  • Asparagus

Spread the 1 lb asparagus woody ends trimmed in a single layer on the prepared baking sheet. Drizzle with 2 tbsp olive oil and scatter the 3 cloves garlic minced over the top. Season with ½ tsp kosher salt and ¼ tsp black pepper freshly ground. Toss everything together with your hands or tongs until each spear is evenly coated, then spread back into a single layer. Make sure the spears are not overlapping — crowding causes steaming instead of roasting.

  • 10–14 min

Roast in the preheated oven for 10–14 minutes, depending on the thickness of your spears. Thin spears (pencil-width) are done at 10 minutes; medium spears at 12 minutes; thick spears at 14 minutes. The 1 lb asparagus woody ends trimmed is done when the tips are lightly browned and crispy and the stalks are just tender when pierced with a fork.

Remove from the oven and immediately squeeze fresh lemon juice freshly squeezed over the top and add the ½ tsp lemon zest if using. Taste and adjust seasoning with a pinch more ½ tsp kosher salt if needed.

  • Lemon Juice
  • Lemon Zest
  • Salt

Transfer to a serving platter. If desired, finish with freshly grated Parmesan cheese freshly grated and a sprinkle of chopped fresh parsley roughly chopped. Serve immediately while hot and the tips are still crispy.
