In a mixing bowl, toss the sliced lean beef sirloin with 1 tablespoon 1 tbsp cornstarch and a pinch of salt until evenly coated. This helps tenderize the meat and gives it a light crust when seared. Set aside. In a small mixing bowl, whisk together the 3 tbsp low-sodium soy sauce, 1 tbsp oyster sauce, 1 tbsp Worcestershire sauce, 1 tsp sesame oil, 1 teaspoon 1 tbsp cornstarch, and ¼ cup low-sodium beef broth until smooth. Set the sauce aside.

Heat a wok or skillet over high heat until very hot. Add ½ tablespoon of vegetable oil and swirl to coat. Add the 1 ¼ lb lean beef sirloin in a single layer and sear undisturbed for 1–2 minutes until browned on one side, then toss and cook another 1 minute. The 1 ¼ lb lean beef sirloin should be just cooked through. Transfer to a plate and set aside.

Add the 1 medium yellow onion and 2 cups broccoli florets and stir-fry for 2–3 minutes until the 2 cups broccoli florets turns bright green and the 1 medium yellow onion softens slightly. Add the 1 whole red bell pepper and 1 whole green bell pepper strips, 4 cloves garlic, and 1 tsp fresh ginger grated. Stir-fry for another 1–2 minutes until fragrant and the peppers are just tender-crisp.
