Main

  • 1.5 lb boneless skinless chicken breasts sliced in half lengthwise to create thin cutlets
  • 4 medium zucchini spiralized into noodles, or use 2 packages shirataki noodles
  • 2 packages shirataki noodles

Chicken Seasoning

  • 1 tsp garlic powder
  • 0.5 tsp Italian seasoning
  • 0.5 tsp salt
  • 0.25 tsp black pepper freshly ground

Alfredo Sauce

  • 4 tbsp unsalted butter
  • 4 cloves garlic minced
  • 1.5 cup heavy cream
  • 1.5 cup Parmesan cheese freshly grated
  • 2 oz cream cheese room temperature, cubed
  • 0.25 tsp white pepper freshly ground
  • 0.25 tsp salt

Garnish

  • 2 tbsp fresh parsley chopped
  • 0.25 cup Parmesan cheese extra, for serving

Instructions

  1. Pat the @[Chicken Breasts] dry with paper towels. In a small #[Mixing Bowl], mix together the @[Garlic Powder], @[Italian Seasoning], @[Salt], and @[Black Pepper]. Season both sides of the @[Chicken Breasts] generously with the spice mixture.
  2. Heat @[Olive Oil] in a large #[Skillet] over ^[medium-high heat] until shimmering. Add the @[Chicken Breasts] in a single layer and cook for ~[4–5 minutes] per side until golden brown and cooked through (%[internal temperature 165°F]). Transfer to a cutting board, let rest for ~[5 minutes], then slice into strips.
  3. While the @[Chicken Breasts] rest, add the @[Zucchini] noodles to the same #[Skillet] over ^[medium heat]. Sauté for ~[2–3 minutes], tossing frequently, just until slightly softened but still with a bite. Remove from the #[Skillet] and set aside. (If using @[Shirataki Noodles], rinse, drain, and dry-toast in the #[Skillet] for ~[2 minutes].)
  4. In the same #[Skillet] (or a medium #[Saucepan]) over ^[medium-low heat], melt the @[Butter]. Add the minced @[Garlic] and sauté for ~[1–2 minutes] until fragrant, being careful not to brown it. Pour in the @[Heavy Cream] and bring to a gentle simmer, stirring frequently.
  5. Add the cubed @[Cream Cheese] and whisk until fully melted and smooth.
