If using wooden skewers, soak them in water for at least 30 minutes before grilling to prevent burning. Metal skewers can be used immediately.

In a large mixing bowl, whisk together the 3 tbsp olive oil, 3 cloves garlic minced, 1 tbsp balsamic vinegar, 1 tsp dried Italian seasoning, ½ tsp smoked paprika, ½ tsp kosher salt, ¼ tsp black pepper freshly ground, and 1 tsp lemon juice freshly squeezed until well combined.

Add all the cut vegetables (2 medium zucchini cut into 1-inch rounds, 2 bell peppers mixed colors, 1 large red onion cut into 1½-inch wedges, 8 oz cremini mushrooms whole or halved if large, 1 cup cherry tomatoes whole, and 1 medium yellow squash cut into 1-inch rounds if using) to the mixing bowl. Toss well to coat every piece in the marinade. Let sit for at least 10 minutes at room temperature, or cover and refrigerate for up to 4 hours for deeper flavor.

Preheat your grill to medium-high heat, about 400°F. Clean and oil the grates well to prevent sticking.

Thread the marinated vegetables onto the skewers, alternating colors and types for even cooking. Keep pieces snug but not packed tightly — a little space helps them cook through. Place 1 cup cherry tomatoes whole and 8 oz cremini mushrooms whole or halved if large between sturdier vegetables to protect them.

Place the skewers on the hot grill. Cook for 10–12 minutes total, turning every 3–4 minutes with tongs, until the vegetables are tender and have visible char marks. Brush with any remaining marinade during the first turn.
