Heat the 1 tbsp olive oil and 1 tbsp unsalted butter in a large saucepan over medium heat. Add the chopped medium yellow onion and cook, stirring occasionally, until softened and translucent, about 5–6 minutes. Add the minced garlic and cook for 1 more minute until fragrant.

Pour in the 2 cans crushed tomatoes and 1 ½ cups low-sodium chicken broth or vegetable broth. Spread softened unsalted butter evenly on one side of each 8 slices sandwich bread white slice. If using 1 tsp Dijon mustard, spread a thin layer on the unbuttered side of 4 slices. Divide the shredded 8 oz sharp cheddar cheese shredded or sliced evenly over the mustard-side (or plain unbuttered side) of those 4 slices, then top with the remaining sandwich bread white slices, buttered side facing out.
