Instructions

In a small mixing bowl, whisk together the olive oil, minced garlic, dried oregano, lemon juice, kosher salt, and black pepper. Place the chicken breasts in a shallow dish or Ziploc bag, pour the marinade over them, and turn to coat. Let marinate for at least 15 minutes at room temperature (or up to 4 hours in the fridge).

Preheat a grill or grill pan over ^[medium-high heat]. Remove the chicken breasts from the marinade and grill for 5–7 minutes per side, until the internal temperature reaches %[165°F] and grill marks form. Transfer to a cutting board, rest for 5 minutes, then slice against the grain.

In a small mixing bowl or quart jar, whisk together the extra-virgin olive oil, red wine vinegar, lemon juice, dried oregano, kosher salt, and black pepper until emulsified. Taste and adjust seasoning as needed.
- 4
In a large mixing bowl, combine the chopped romaine lettuce, tomato wedges, sliced English cucumber, red onion, green bell pepper strips, and kalamata olives. Drizzle with the dressing and toss gently to coat.
- 5
Divide the dressed salad among four plates or bowls. Top each with sliced grilled chicken breasts and crumbled feta cheese. Serve immediately.
