In a large mixing bowl, whisk together the 2 cups fine blanched almond flour, 2 tsp baking powder, ½ tsp ground cinnamon (if using), and ½ tsp fine salt until well combined and no lumps remain.

In a separate mixing bowl or large measuring cups, whisk together the 3 large eggs, ½ cup milk, 1 tbsp butter or coconut oil, 2 tbsp pure maple syrup, and 1 tsp vanilla extract until smooth. Pour the wet ingredients into the dry ingredients and stir gently until just combined — a few small lumps are fine. Let the batter rest for 2–3 minutes; it will thicken slightly.
