In a small mixing bowl, combine all the spice blend ingredients — 3 tbsp chili powder, 2 tsp ground cumin, 1 tsp smoked paprika, 1 tsp dried oregano, ½ tsp cayenne pepper (if using), 1 ½ tsp kosher salt, and ½ tsp black pepper freshly ground. Mix well and set aside. Having the spices pre-measured means you can add them all at once and keep the cooking moving.

Heat a large Dutch oven or heavy-bottomed pot over medium-high heat. Add the 2 tbsp olive oil. Once shimmering, add the diced yellow onion diced and 1 green bell pepper diced. Cook, stirring occasionally, until softened and the onion turns translucent, about 5–6 minutes.

Add the minced cloves garlic minced and 1 jalapeño seeded and minced (if using) to the pot. Stir and cook for 1 minute until fragrant.
