Pat the 1 ½ lb cod fillets very dry with paper towels, then cut them into sticks roughly 1 inch wide and 3–4 inches long. Season lightly with ½ tsp salt and ¼ tsp black pepper.

Set up a three-station breading line: Place the ½ cup all-purpose flour in one shallow mixing bowl. Beat the 2 large eggs in a second mixing bowl. In a third mixing bowl, combine the 1 cup panko breadcrumbs, ¼ cup grated Parmesan cheese, 1 tsp garlic powder, 1 tsp paprika, ½ tsp salt, and ¼ tsp black pepper. Working one piece at a time, dredge each fish stick in ½ cup all-purpose flour and shake off the excess. Dip it into the beaten large eggs, letting any excess drip off. Finally, press it firmly into the 1 cup panko breadcrumbs mixture, turning to coat all sides evenly. Place the breaded sticks on the prepared wire rack in a single layer without touching.
