  • 25–75 min

Drain the soaked black lentils and kidney beans. Add them to a Instant Pot or large pot with 4 cups of water for cooking lentils and 1 tsp 1 tsp salt. If using a Instant Pot, cook on high pressure for 25–30 minutes (or 5–6 whistles). If using a regular pot, bring to a boil, then simmer covered for 60–75 minutes until both the lentils and beans are completely soft and mashable between your fingers. Do not rush this step — undercooked lentils will ruin the final texture.

Uses

  • Instant Pot
  • Black Cardamom Pods
  • Water
  • ½ tsp Kashmiri red chili powder for color
  • Salt

Once cooked, use the back of a spoon or a potato masher to roughly mash about one-third of the lentils directly in the pot. This creates a naturally thick, creamy base without any blending. Set aside with all the cooking liquid.

In a large, heavy-bottomed skillet or pot, melt 3 tbsp 3 tbsp unsalted butter with 1 tbsp 1 tbsp neutral oil such as vegetable or canola over medium heat. The oil prevents the 3 tbsp unsalted butter from burning. Add the 1 tsp cumin seeds, 1 piece cinnamon stick about 1 inch, 2 whole green cardamom pods lightly crushed, 1 whole black cardamom pod lightly crushed (if using), and cloves. Sizzle for 30–45 seconds until fragrant — the spices should spit and pop gently.

Uses

  • Pot
  • Unsalted Butter
  • Neutral Oil
  • ½ tsp Kashmiri red chili powder for color
  • Cumin Seeds
  • Ground Cumin

Add the finely diced medium yellow onion finely diced and cook over medium heat, stirring frequently, for 12–15 minutes until deeply golden and caramelized. Don't rush this — properly cooked onions are the backbone of the dish's sweetness and depth.

Uses

  • Yellow Onion
  • ½ tsp Kashmiri red chili powder for color
  • 2 min

Add the 6 cloves garlic minced or grated minced and 1 piece fresh ginger 1-inch piece grated. Stir and cook for 2 minutes until the raw smell disappears and the mixture is fragrant.

Uses

  • Garlic
  • Ginger
  • ½ tsp Kashmiri red chili powder for color
  • 1 min

Add the ½ tsp Kashmiri red chili powder for color, 1 tsp ground coriander, ½ tsp ground cumin, ¼ tsp turmeric, and 1 tsp 1 tsp salt. Stir into the onion mixture and cook for 1 minute to bloom the spices in the fat.

Pour in the 1 can crushed tomatoes. Stir well to combine, then cook over medium heat for 15–20 minutes, stirring occasionally, until the tomato sauce has thickened significantly, darkened in color, and the fat (3 tbsp unsalted butter/1 tbsp neutral oil such as vegetable or canola) starts to separate and pool around the edges. This step is key — it concentrates flavor and removes the raw tomato taste.

Uses

  • Tomato
  • ½ tsp Kashmiri red chili powder for color
  • Unsalted Butter
  • Neutral Oil

Add the cooked lentils and beans along with all their cooking liquid into the tomato base. Stir everything together thoroughly. Add up to 1 cup of water for cooking lentils if the dal looks too thick at this stage — it will thicken more as it simmers.

Uses

  • Tomato
  • Water
  • ½ tsp Kashmiri red chili powder for color
  • 30–40 min
  • Low

Bring to a gentle boil, then reduce heat to the lowest setting. Simmer uncovered, stirring every 10 minutes, for at least 30–40 minutes. The longer it simmers, the richer and more cohesive the flavor becomes. The dal should be thick, glossy, and deeply colored. Add a splash of water for cooking lentils if it gets too thick.

Uses

  • ½ tsp Kashmiri red chili powder for color
  • Water

Stir in 2 tbsp 3 tbsp unsalted butter, the ⅓ cup heavy cream plus more to drizzle, and the remaining 0.5 tsp ½ tsp garam masala. Taste and adjust 1 tsp salt. If the 1 can crushed tomatoes were acidic, add a pinch of sugar to balance acidity to balance. Simmer gently for another 5 minutes, stirring to incorporate the ⅓ cup heavy cream plus more to drizzle fully.

Uses

  • Unsalted Butter
  • Heavy Cream
  • ½ tsp Kashmiri red chili powder for color
  • Garam Masala

Remove and discard the whole spices (1 piece cinnamon stick about 1 inch, 2 whole green cardamom pods lightly crushed, cloves) if you can find them — or simply warn diners to set them aside. The dal should now be thick, velvety, and deeply aromatic.

Uses

  • Cinnamon Stick
  • Cardamom Pods

Ladle into bowls. Finish with a swirl of heavy cream plus more to drizzle, a pinch of Kashmiri red chili powder for color for color, and a scattering of fresh fresh cilantro roughly chopped. Serve hot with naan, roti, or steamed basmati rice.

  • Heavy Cream
