Melt the 3 tbsp unsalted butter in a large pot over medium-high heat. Add the 2 medium shallots and cook, stirring occasionally, for 3–4 minutes until softened and translucent. Add the 3 cloves garlic and 1 tsp fresh thyme leaves and cook for 1 minute more until fragrant.

Add the sliced cremini mushrooms to the pot. Cook, stirring occasionally, for 8–10 minutes until the mushrooms have released their liquid and are deeply golden brown.
