In a medium saucepan over medium heat, warm the 2 tbsp olive oil extra-virgin. Add the 3 cloves garlic minced and sauté for about 1 minute, stirring frequently, until fragrant but not browned.

Add the dry 1 ½ cups couscous to the pan and stir to coat with the 2 tbsp olive oil extra-virgin. Toast for 2 minutes, stirring often, until the 1 ½ cups couscous smells nutty and turns very lightly golden.

Pour in the 1 ¾ cups vegetable broth low-sodium preferred and add the ½ tsp salt and ¼ tsp black pepper. Bring to a boil, then immediately remove from heat. If using, stir in the 1 tbsp unsalted butter. Cover tightly with a lid and let the 1 ½ cups couscous steam undisturbed for 5 minutes.

Remove the lid and fluff the 1 ½ cups couscous thoroughly with a fork, separating all the grains. Drizzle with 1 tbsp lemon juice, sprinkle in the 1 tsp lemon zest and ¼ cup fresh parsley roughly chopped, and toss gently to combine. Taste and adjust seasoning as needed. Serve warm.
