Cottage Cheese Ice Cream
About this recipe
The viral 2-ingredient cottage cheese ice cream that took social media by storm! Blending cottage cheese until silky smooth creates a surprisingly creamy, protein-packed frozen treat that rivals traditional ice cream. Customize it with your favorite mix-ins for an easy, guilt-free dessert the whole family will love.
Instructions
- 1
Add the cottage cheese, honey, vanilla extract, and salt to a high-powered blender or food processor. Blend on high for 60–90 seconds, scraping down the sides as needed, until the mixture is completely smooth and silky with no visible curds.
- 2
Taste the blended base and adjust sweetness by adding more honey if desired. If making a flavored version, add frozen strawberries, unsweetened cocoa powder, or creamy peanut butter now and blend again until fully incorporated and smooth.
- 3
Pour the blended mixture into a freezer-safe airtight container (a loaf pan works great). If using mini chocolate chips or other chunky mix-ins, fold them in with a spatula now. Smooth the top with the spatula, then press a piece of plastic wrap directly onto the surface to prevent ice crystals from forming.
- 4
Freeze for at least 4 hours, or until firm. For best scoopability, remove from the freezer and let sit at room temperature for 5–10 minutes before serving. Scoop into bowls or cones and enjoy immediately.
