Instructions

  • 1–2 min

Add the 2 cups full-fat cottage cheese 4% milkfat for best creaminess, 3 tbsp honey, 1 tsp pure vanilla extract, and 1 pinch salt to a high-powered blender or food processor. Blend on high for 60–90 seconds, scraping down the sides as needed, until the mixture is completely smooth and silky with no visible curds.

Uses

  • Blender
  • Food Processor
  • Cottage Cheese
  • Honey
  • Vanilla Extract
  • Salt

Taste the blended base and adjust sweetness by adding more 3 tbsp honey if desired. If making a flavored version, add ½ cup frozen strawberries, 1 tbsp cocoa powder unsweetened, or 2 tbsp peanut butter creamy now and blend again until fully incorporated and smooth.

Uses

  • Honey
  • Strawberries
  • Unsweetened Cocoa Powder
  • Creamy Peanut Butter

Pour the blended mixture into a freezer-safe airtight container (a loaf pan works great). If using ¼ cup mini chocolate chips or other chunky mix-ins, fold them in with a spatula now. Smooth the top with the spatula, then press a piece of plastic wrap directly onto the surface to prevent ice crystals from forming.

Uses

  • Airtight Container
  • Loaf Pan
  • Spatula
  • Plastic Wrap
  • Mini Chocolate Chips
  • 240–10 min

Freeze for at least 4 hours, or until firm. For best scoopability, remove from the freezer and let sit at room temperature for 5–10 minutes before serving. Scoop into bowls or cones and enjoy immediately.
