Add the 1 cup full-fat cottage cheese to a blender or food processor. Blend on high for 30–45 seconds until completely smooth and creamy with no visible curds. Scrape down the sides as needed.

Add the 3 tbsp almond butter, 3 tbsp maple syrup adjust, 1 tsp pure vanilla extract, and ¼ tsp fine sea salt to the blender. Blend again until fully combined and silky smooth, about 20 seconds.

Transfer the blended mixture to a mixing bowl. Stir in the 3 tbsp oat flour (and 1 tbsp coconut sugar if using) with a spatula until a thick, scoopable dough forms. If the dough feels too loose, add another tablespoon of oat flour.
