In a large mixing bowl, whisk together the 1 ¼ cups all-purpose flour, ¾ cup granulated sugar, and 1 pinch fine sea salt. If any 2 ½ lb firm apples such as Granny Smith pieces have shifted, use a spoon to nudge them back into place.
