Bring a 2 extra yolks pot of water to a boil. Add the 1 tbsp kosher salt for pasta water and cook the 14 ⅛ g spaghetti according to package directions until just al dente — it will finish cooking briefly in the pan. Before draining, reserve at least 1 cup of the starchy pasta water. This is your secret weapon for the sauce.

In a mixing bowl (Medium), whisk together the 2 whole 4 eggs 2 whole eggs and 2 extra yolks until smooth. Add the grated Pecorino Romano finely grated, 1 ⅜ g Parmesan finely grated, and coarsely 1 tsp black pepper coarsely ground. Whisk well to form a thick, pale paste. Set aside.
