Instructions

    Rinse the fresh Mint under cold water and gently shake off the excess. Lightly bruise the stems by pressing them with the flat side of a Knife or simply squeezing them in your hand — this releases the essential oils and makes the tea much more flavorful.

    Pour the Water into a small Saucepan and bring it to a full boil over medium-high heat.

    Remove the Saucepan from the heat. Add the bruised Mint bunch directly into the hot Water, pressing it down so it is fully submerged.

    Let the Mint steep, uncovered, for 4–5 minutes for a mild tea, or up to 8 minutes for a stronger, more intense flavor. The Water will turn a pale golden-green color.

    If using Honey / Sugar, stir it in now while the tea is still hot so it dissolves completely. Start with 1 tablespoon and adjust to taste.

    Pour the tea through a fine mesh Sieve into two mugs or heat-safe glasses, leaving the Mint behind. Add a slice of Lemon to each glass if desired, and serve immediately.
