Rinse the fresh fresh mint under cold water and gently shake off the excess. Lightly bruise the stems by pressing them with the flat side of a knife or simply squeezing them in your hand — this releases the essential oils and makes the tea much more flavorful.

Pour the 2 cups water filtered into a small saucepan and bring it to a full boil over medium-high heat.

Remove the saucepan from the heat. Add the bruised 1 bunch fresh mint bunch directly into the hot 2 cups water filtered, pressing it down so it is fully submerged.

Let the 1 bunch fresh mint steep, uncovered, for 4–5 minutes for a mild tea, or up to 8 minutes for a stronger, more intense flavor. The 2 cups water filtered will turn a pale golden-green color.

If using 1 tbsp honey / sugar, stir it in now while the tea is still hot so it dissolves completely. Start with 1 tbsp and adjust to taste.

Pour the tea through a fine mesh sieve into two mugs or heat-safe glasses, leaving the 1 bunch fresh mint behind. Add a slice of lemon to each glass if desired, and serve immediately.
