Preheat your oven to 375°F. Lightly 6 tbsp unsalted butter cold a baking dish (or a similar 2.5–3 quart dish) and set aside.

Peel, core, and slice the 2 ½ lb apples peeled into ¼-inch thick slices. Add them to a large mixing bowl. Add the 3 tbsp granulated sugar, 1 tbsp lemon juice freshly squeezed, 1 tsp ground cinnamon, ¼ tsp ground nutmeg (if using), and 1 tbsp cornstarch. Toss well until every slice is evenly coated.

Spread the 2 ½ lb apples peeled mixture evenly into the prepared baking dish in a single, level layer. Set aside while you make the topping.

In a medium mixing bowl, combine the 1 cup all-purpose flour, 1 cup old-fashioned rolled oats, ¾ cup light brown sugar, 1 tsp ground cinnamon, and ¼ tsp fine salt. Stir together until evenly mixed.

Add the cold 6 tbsp unsalted butter cold cubes to the dry mixture. Scatter the crumble topping evenly over the 2 ½ lb apples peeled filling, covering the apples completely. Don't press it down — a loose, uneven layer bakes up crispier and more textured.
