
Chickpea Salad

A bright, satisfying chickpea salad loaded with crisp vegetables, fresh parsley, and a punchy lemon-garlic dressing. It comes together in minutes, holds up beautifully in the fridge, and works equally well as a light lunch, a hearty side, or a make-ahead jar salad for the week.

Rinse and drain the chickpeas in a colander and shake off excess water. Chop the red bell pepper, cucumber, celery, and red onion into roughly ½-inch pieces. Roughly chop the Italian flat-leaf parsley leaves and tender stems.

In a small mixing bowl or jar, whisk together the extra-virgin olive oil, fresh lemon juice, red wine vinegar, minced garlic, sea salt, and black pepper until well combined. Taste and adjust seasoning — add a little more lemon juice if you want extra brightness.

Add the chickpeas, red bell pepper, cucumber, celery, red onion, and Italian flat-leaf parsley to a large mixing bowl. Pour the dressing over the top and toss everything together until evenly coated.

Let the salad sit for at least 5 minutes so the chickpeas absorb the dressing. Taste once more, adjust sea salt and black pepper as needed, and serve at room temperature or chilled. For best flavor, refrigerator for 30 minutes before serving.
