  • 1.5 lb baby potatoes diced into ½-inch pieces
  • 1 large red bell pepper diced
  • 1 medium yellow onion diced
  • 3 cloves garlic minced
  • 3 tbsp extra-virgin olive oil divided
  • 1 tsp smoked paprika
  • 0.75 tsp ground cumin
  • 0.5 tsp fine salt plus more
  • 0.25 tsp black pepper freshly ground
  • 0.25 tsp red pepper flakes
  • 2 tbsp fresh flat-leaf parsley roughly chopped
  • 1 whole lemon cut into wedges for serving

Instructions

  1. Pat the rinsed @[Chickpeas] dry thoroughly with a clean kitchen towel — this is the key to getting them crispy. In a small #[Mixing Bowl], combine the @[Smoked Paprika], @[Cumin], @[Salt], @[Black Pepper], and @[Red Pepper Flakes] (if using). Set aside.
  2. Heat ~[2 tablespoons] of @[Extra-Virgin Olive Oil] in a large #[Skillet] over ^[medium-high heat]. Add the diced @[Baby Potatoes] in a single layer and cook undisturbed for ~[5 minutes] until golden on the bottom.
