Beef Filling

  • 1.5 lb lean ground beef 80/20 or leaner
  • 1 medium yellow onion finely diced
  • 3 cloves garlic minced
  • 2 tsp chili powder
  • 1 tsp ground cumin
  • 0.5 tsp smoked paprika
  • 0.5 tsp salt
  • 0.25 tsp black pepper freshly ground
  • 0.5 cup tomato sauce

Cilantro-Lime Rice

  • 1 cup long-grain white rice rinsed
  • 2 cup water
  • 1 tbsp lime juice freshly squeezed
  • 2 tbsp fresh cilantro chopped

Main

  • 6 whole large flour tortillas 10-inch, warmed
  • 1 can refried beans warmed
  • 1.5 cup shredded Mexican cheese blend
  • 1 cup sour cream
  • 1 cup salsa store-bought or homemade
  • 1 whole avocado sliced or mashed

Instructions

  1. Combine the rinsed @[Long-Grain White Rice] and @[Water] in a #[Saucepan]. Bring to a boil ^[over high heat], then reduce to ^[a low simmer], cover, and cook ~[for 15 minutes] until the @[Water] is absorbed.
