Topped with a sweet-savory layer of honey, toasted walnuts, and dried cranberries, this classic French-inspired crowd-pleaser looks impressive but comes together in under an hour. Serve it straight from the oven with crackers, sliced baguette, or apple slices for an elegant starter that never fails to impress.

    Preheat your Oven to 400°F. Line a rimmed Baking Sheet with Parchment Paper and set aside.

    If your Puff Pastry is frozen, make sure it is fully thawed but still cold — it should be pliable and unfold without cracking. Lightly flour a clean work surface and unfold one sheet of Puff Pastry. (Save the second sheet for another use, or use it to cut decorative shapes for the top.)

    Place the Brie wheel in the center of the pastry sheet. Spoon the Honey over the top of the Brie, then scatter the Walnuts, Cranberries, and fresh Thyme (if using) on top.

    Fold the pastry up and over the Brie: bring one side up and over the top, then fold in the adjacent sides like wrapping a gift, pressing gently to seal. Fold the final flap over and press all seams firmly together so no cheese can escape. Trim any very thick excess pastry with Kitchen Shears if needed — you want a snug, even wrap without too many thick layers on top.

    Carefully flip the wrapped Brie over so the seam side is down on the prepared Baking Sheet. This gives you a smooth, beautiful top for presentation.

    In a small Mixing Bowl, whisk together the Egg and 1 tablespoon of Water to make an egg wash. Brush the entire surface of the pastry generously and evenly with the egg wash — this is what gives it that deep golden color. If you have extra pastry scraps, cut out decorative leaves or stars, press them gently onto the top, and brush those with egg wash too.

    Bake on the center rack for 22–25 minutes, until the pastry is deeply golden brown and puffed. Do not underbake — a pale pastry means the cheese inside may not be fully melted. The internal pastry should look set and dry, not doughy, at the seams.

    Remove from the Oven and let the Brie en Croûte rest on the Baking Sheet for exactly 5 minutes before transferring to a serving board. This brief rest allows the cheese to settle slightly so it doesn't pour out the moment it's cut — but it should still be beautifully molten inside.

    Transfer to a wooden board or large plate. Drizzle with an extra thread of Honey if desired. Surround with sliced Baguette, crackers, and Apple slices. To serve, cut through the pastry and let guests scoop out the melted cheese with the bread or crackers. Serve immediately while warm.
