Toast the coconut: In a dry skillet over medium heat, spread the ¾ cup sweetened shredded coconut toasted (1 cup total — ¾ cup for layers, ¼ cup for garnish) and stir frequently for 3–4 minutes until golden and fragrant. Transfer immediately to a plate to cool. Set aside.

In a medium saucepan, whisk together the ¾ cup granulated sugar, ¼ cup cornstarch, and ½ tsp salt until combined. Gradually whisk in the 1 can full-fat coconut milk well and 1 ½ cups whole milk until smooth with no lumps.
