Desalt the 1 lb salted codfish (saltfish) boneless: Place the 1 lb salted codfish (saltfish) boneless in a medium saucepan and cover with cold water. Bring to a boil over high heat, then drain and repeat with fresh water. Boil a second time for 15–20 minutes until the fish is tender and the saltiness is reduced to a pleasant level. Drain, let cool slightly, then flake the fish into bite-sized pieces, removing any bones or skin.

Heat the 3 tbsp vegetable oil in a large skillet over medium heat. Add the sliced medium yellow onion and the white parts of the scallions (green onions) sliced and cook, stirring occasionally, for 3–4 minutes until softened and translucent.
