Soak the thinly sliced cebolla roja in a small mixing bowl of cold water for 5–10 minutes. This mellows its sharp bite significantly. Drain and pat dry before using.

In a small mixing bowl, whisk together the 3 tbsp jugo fresco de lima, 2 tbsp aceite de oliva virgen extra, 1 tsp miel, ¼ tsp sal kosher, and ¼ tsp pimienta negra until well combined. Taste and adjust — add a little more 3 tbsp jugo fresco de lima for brightness or 1 tsp miel for sweetness.
