In a small mixing bowl, whisk together the 3 tbsp aceite de oliva virgen extra, 2 tbsp vinagre de sidra de manzana, 1 ½ tbsp miel, and 1 tsp mostaza Dijon until smooth and emulsified, about 30 seconds.

Stir in the 1 tsp semillas de amapola, ¼ tsp sal kosher, and ⅛ tsp pimienta negra. Taste and adjust — add a little more 1 ½ tbsp miel if you prefer it sweeter, or a splash more 2 tbsp vinagre de sidra de manzana for extra tang. Set aside.

Make sure your 5 oz espinaca tierna is completely dry (wet spinach will dilute the dressing). Add it to a large salad mixing bowl.

Scatter the sliced fresas frescas, ½ cup nueces pecanas confitadas, ½ cup queso feta, and ¼ whole cebolla roja slices evenly over the spinach. Add ¼ cup almendras rebanadas tostadas if using.

Just before serving, drizzle the poppy seed dressing over the salad. Toss gently to coat everything lightly — start with about two-thirds of the dressing and add more to taste. Serve immediately.
