Slice the 8 oz queso kefalotyri o graviera into slabs about 1/2 inch thick. If using a large block, cut it into pieces roughly 3–4 inches wide so they fit comfortably in the pan. Carefully lay the floured 8 oz queso kefalotyri o graviera slabs into the hot 3 tbsp aceite de oliva virgen extra in a single layer. Do not move them. Fry for 2–3 minutes until the bottom is deeply golden-brown and a crust has formed. You'll see the edges start to look set and slightly melty.
