Pat the 14 oz de paneer cubes completely dry with paper towels — this is key for getting a good golden sear. Season lightly with ½ cucharadita de sal.

Uses

  • Paneer
  • 2–3 min
  • Medium-high

Heat 2 cucharadas of cucharadas de aceite neutral in a skillet over medium-high heat. Once shimmering, add the 14 oz de paneer cubes in a single layer. Sear undisturbed for 2–3 minutes until golden brown on the bottom, then flip and cook another 1–2 minutes. Transfer to a plate lined with paper towels. Set aside.

Uses

  • Skillet
  • Neutral Oil
  • Paneer
  • 1–2 min

Bring a saucepan of taza de agua to a boil. Add the 1 lb de espinaca fresca and blanch for 60–90 seconds until just wilted. Drain immediately and transfer to a blender. Add the ½ taza of taza de agua and blend until smooth. Set aside — don't over-blend to keep a little texture, or blend fully for a silky sauce.

Uses

  • Saucepan
  • Blender
  • 1–1 min
  • Medium

In the same skillet used for the 14 oz de paneer (wipe it out if needed), melt the 2 cucharadas de ghee over medium heat. Add the 1 cucharadita de semillas de comino and let them sizzle for 30–45 seconds until fragrant and lightly toasted.

Uses

  • Skillet
  • Paneer
  • Ghee
  • 7–9 min

Add the diced cebolla amarilla and cook, stirring frequently, for 7–9 minutes until soft and golden. Don't rush this step — properly cooked onions are the backbone of the sauce.

Uses

  • Yellow Onion
  • 2 min

Add the 5 dientes de ajo, 1 cucharada de jengibre fresco rallado o finamente picado, and 1 chile serrano finamente picado. Stir and cook for 2 minutes until fragrant.

Uses

  • Serrano Pepper
  • 3–4 min

Add the diced tomate Roma and cook for 3–4 minutes, stirring occasionally, until it breaks down and the mixture looks jammy.

  • 1–2 min

Stir in the 1 cucharadita de cilantro, 1 cucharadita de comino, ½ cucharadita de cúrcuma, ½ cucharadita de garam masala, ½ cucharadita de pimienta de cayena ajustar, and ½ cucharadita de sal. Cook the spices into the base for 1–2 minutes, stirring constantly, until deeply fragrant.

Uses

  • Garam Masala
  • 5 min
  • Medium-low

Pour the blended 1 lb de espinaca fresca purée into the skillet and stir well to combine with the spiced onion base. Reduce the heat to medium-low and simmer for 5 minutes, stirring occasionally.

Uses

  • Skillet
  • Yellow Onion

Stir in the 1 cucharada de crema espesa rociada encima and mix until fully incorporated. Taste and adjust ½ cucharadita de sal as needed. The sauce should be thick, vibrant green, and richly spiced.

  • 3–5 min
  • Low

Gently fold in the seared 14 oz de paneer cubes. Simmer on low for 3–5 minutes to warm the 14 oz de paneer through and let it absorb the flavors. Be gentle — 14 oz de paneer can break apart if stirred too aggressively.

Uses

  • Paneer

Transfer to a serving dish. Drizzle with a swirl of cucharada de crema espesa rociada encima and a pinch of cucharadita de garam masala if desired. Serve hot with basmati rice, naan, or roti.

Uses

  • Garam Masala
