In a small mixing bowl, combine all the spice blend ingredients — 3 tbsp chile en polvo, 2 tsp comino, 1 tsp pimentón, 1 tsp orégano seco, ½ tsp polvo de ajo, ½ tsp polvo de cebolla, ¼ tsp pimienta de cayena ajustar, 1 ½ tsp sal kosher, ½ tsp pimienta negra, and 1 tsp azúcar (if using). Mix well and set aside.

Heat the 2 tbsp aceite de oliva in a large Dutch oven or heavy-bottomed pot over medium-high heat. Add the diced cebolla amarilla and 1 pimiento morrón verde. Cook, stirring occasionally, until softened and the onion is translucent, about 5–6 minutes.

Add the minced dientes de ajo and cook for 1 minute more, stirring constantly, until fragrant. Do not let the 4 dientes de ajo burn.

Add the 2 lb carne molida de res to the pot. Break it up with a wooden spoon into small crumbles. Cook over medium-high heat until fully browned with no pink remaining, about 7–8 minutes. Drain off any excess fat, leaving just a thin coating in the pot.

Add the 2 tbsp pasta de tomate and stir it into the 2 lb carne molida de res. Cook for 2 minutes, stirring frequently — this step caramelizes the paste and deepens the flavor significantly.

Sprinkle the entire spice blend over the 2 lb carne molida de res mixture and stir to coat everything evenly. Cook for 1 minute to bloom the spices in the heat.

Pour in the diced lata tomates (with their juices), 1 lata salsa de tomate, and 1 cup caldo de carne. Stir everything together, scraping up any browned bits from the bottom of the pot — those bits are pure flavor.

Add the drained lata frijoles rojos escurridos y enjuagados and 1 lata frijoles negros escurridos y enjuagados. Stir to combine. Bring the chili to a boil over high heat, then reduce the heat to low.

Partially cover the pot and let the chili simmer on low heat for at least 45 minutes, stirring every 10–15 minutes. The longer it simmers, the richer the flavor becomes. If it gets too thick, add a splash of caldo de carne or water. If too thin, leave the lid off for the last 15 minutes.

Taste and adjust seasoning — add more 1 ½ tsp sal kosher, ¼ tsp pimienta de cayena ajustar for heat, or a pinch of azúcar if the 2 lata tomates taste too acidic. Ladle into bowls and top with your choice of shredded 1 queso cheddar, 1 crema agria, 1 cebolletas en rodajas, 1 cilantro fresco picado grueso, and sliced jalapeño.
