In a separate medium mixing bowl, whisk together the 1 ¼ cups suero de leche, 1 egg a temperatura ambiente, melted mantequilla sin sal, and 1 tsp extracto de vainilla pura until smooth and fully combined.

Pour the wet ingredients into the dry ingredients and gently fold together with a spatula or whisk until just combined. Stop mixing as soon as no dry flour streaks remain — the batter should look lumpy.

Flip the pancake in one confident motion and cook for another 1–2 minutes until the underside is golden brown and the pancake is cooked through.
