Pour the wet ingredients into the dry ingredients and gently fold together with a Spatula or Whisk until just combined. Stop mixing as soon as no dry flour streaks remain — the batter should look lumpy.

Let the batter rest, uncovered, for 5 minutes. This allows the Baking Powder and Baking Soda to activate and the gluten to relax, which is key to achieving maximum fluffiness.
